Pecan Pie in Iquitos

I spent a huge amount of time today making pecan pie.

It´s Thanksgiving. I am in a different place. It´s important to remember and be grateful. There are some things that take you specific places more than others. I knew how to make it feel like Thanksgiving.

With the help of a local colleague from the US who made the crust, I used three types of sugar (panela, brown sugar and white sugar) to make the filling. It was too sweet, and I only had one proper measuring device for the whole operation. I used the office´s broken oven to bake it. It worked, and it was delicious.

One knows what ones triggers need to be sometimes.
