Pisco and Chocolate

Last night I went to a Pisco and Chocolate pairing. It was exquisite. It was about really a really strong Peruvian spirit, Pisco, that is often compared to Brandy. We tried it by itself in little tastes the instructor refered to as “besitos” or small kisses. They we took a tiny sip of Pisco, a bite of choclate, and combined them to see how they were different. I had never formally done this before. There is something about this, and I think the idea that things can be different (and often better) when put together is a big concept. It is different than deciding one thing is it. It is better to say, these two together, offer something I had not previous considered. These two delicious things create a different delicious thing when they are put together.
